Ingredients:
- 2 chicken breasts (about 300g), diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 can (400ml) coconut milk
- 1 bell pepper, sliced
- Salt and pepper to taste
- Fresh cilantro for garnish

Instructions:
- Heat olive oil in a pan over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and grated ginger, cooking for another minute.
- Add diced chicken breasts and cook until browned.
- Sprinkle curry powder and turmeric over the chicken, stirring well to coat.
- Pour in the coconut milk and bring to a simmer.
- Add sliced bell pepper and cook for another 10 minutes until the chicken is cooked through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
