Ingredients:

  • 2 chicken breasts (about 300g), diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 can (400ml) coconut milk
  • 1 bell pepper, sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  • Heat olive oil in a pan over medium heat.
  • Add chopped onion and sauté until translucent.

  • Sprinkle curry powder and turmeric over the chicken, stirring well to coat.
  • Pour in the coconut milk and bring to a simmer.
  • Add sliced bell pepper and cook for another 10 minutes until the chicken is cooked through.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.
