Ingredients:

  • 2 chicken breasts (about 300g)
  • 1 cup quinoa (about 170g)
  • 2 cups chicken broth (500ml)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (bell peppers, carrots, and peas)
  • Fresh parsley for garnish

Instructions:

  • Rinse the quinoa under cold water and drain.
  • In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and liquid is absorbed.
  • While the quinoa is cooking, season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
  • In a skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until fully cooked and golden brown.
  • Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  • In the same skillet, add the mixed vegetables and sauté for about 5 minutes until tender.
  • To serve, place a portion of quinoa in a bowl, top with sliced chicken and sautéed vegetables. Garnish with fresh parsley.
