Ingredients:
- 2 chicken breasts (about 300g)
- 1 cup quinoa (about 170g)
- 2 cups chicken broth (500ml)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (bell peppers, carrots, and peas)
- Fresh parsley for garnish

Instructions:
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and liquid is absorbed.
- While the quinoa is cooking, season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- In a skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until fully cooked and golden brown.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
- In the same skillet, add the mixed vegetables and sauté for about 5 minutes until tender.
- To serve, place a portion of quinoa in a bowl, top with sliced chicken and sautéed vegetables. Garnish with fresh parsley.
